Doppio Passo gets its name from the 'ripasso' style of winemaking - a technique that involves a short second fermentation on the pulp and skins left over from the first fermentation to give extra body and texture. The winery also uses a proportion of later harvested, super-ripe grapes in the blend to give this wine a silky smooth texture with plump, jammy fruitiness.
